2nd Annual Spirit of Baja to Feature Cuisine by Celebrity Chef Javier Plascencia

The Westgate Hotel Executive Chef Fabrice Hardel and Celebrity Chef Javier Plascencia are partnering to present The Westgate Hotels’ second annual Spirit of Baja.

On Friday, April 15 for guests will enjoy an unforgettable five-course wine pairing dinner and culinary journey inspired by the vibrant flavors of Baja California, Mexico.

Guests will be welcomed to the event with an exclusive Mezcal cocktail reception from 6:30 p.m. to 7:30 p.m., a creative collaboration by mixologists from The Westgate Hotel and Bracero, and Baja-inspired hors d’oeuvres created by Baja cuisine aficionado, Executive Chef Fabrice Hardel.

For the main event, celebrity guest Chef Javier Plascencia will take over the kitchen to prepare a four-course wine pairing dinner showcasing his innate talent for achieving combinations that create completely new flavors. A Mexican culinary master and gastronomic trend setter, Chef Plascencia continues to popularize Baja-Mediterranean cuisine with his flair for dramatic presentation, an appreciation for Tijuana street food’s deep flavors and a binational approach to farm-to-table cooking. The evening will conclude a dessert prepared by Chef Fabrice, paired with an exclusive tequila cocktail from The Westgate Hotel’s popular bartender, Irving Gonzalez.

Fernando Gaxiola, the acclaimed owner of Baja Wine + Food and partner at the importer/distributor Truly Fine Wine will pour a selection of the best wines from Baja California’s Valle de Guadalupe. The selection will include wines from Adobe GuadalupeMonte XanicVilla Montefiori and Finca La Carrodilla. Vintners from each winery will also be in attendance, each telling their unique stories of how their winery has flourished into what it is today.
